Super Healthy Lentil Soup
- 2 Tablespoons Olive Oil, Divided
- 1 Medium White Onion, Diced
- 1 Red Bell Pepper, Diced
- 3 Large Carrots, Peeled And Diced
- 3 cloves Garlic, Minced
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1-1/2 Tablespoon Cumin
- 1 Tablespoon Oregano
- 1 Tablespoon Dried Thyme
- Salt And Pepper
- 1-1/2 cup French Green Lentils
- 2 quarts Vegetable Stock
- 2 Bay Leaves
- Parmesan And Freshly Chopped Parsley, For Garnish
- Heat a large pot or Dutch oven with 1 tablespoon olive oil on the stove to medium-high heat. Add veggies (onion, pepper, carrots), a pinch of salt and pepper. Stir and let cook for 15 minutes.
- Add minced garlic and spices (except bay leaves) and stir. Cook for a minute to toast the spices.
- Add lentils and remaining tablespoon of olive oil and stir to fully coat lentils in olive oil and spices. Cook for 1-2 minutes.
- Add vegetable stock and bay leaves and stir. Bring everything to a boil, cover and simmer for 30 minutes, until lentils are cooked through.
- Serve hot and top with a sprinkle of Parmesan and some freshly chopped parsley.
