Homemade Ginger Beer

  1. Note the recipe requires overnight steeping, so plan ahead.
  2. 1. In a medium saucepan, bring lemon rind, lemon juice, sugar, ginger and water to the boil over a high heat, stirring occasionally. Boil for about five minutes, until the sugar has dissolved.
  3. 2. Turn off the heat and let the mixture steep in the saucepan overnight.
  4. 3. The next morning, strain the mixture into a pitcher through a muslin cloth or sieve.
  5. 4. To serve, fill a glass with some ice. Add about 1/4 cup of syrup and top with mineral water. If desired, garnish with a few mint leaves.
