Homemade Ginger Beer
- 1 teaspoon Lemon, Rind
- 3 Tablespoons Lemon Juice
- 1 cup Caster Sugar
- 1 piece (4 Cm. Long) Ginger, Grated
- 1 cup Water
- Chilled Mineral Water, As Desired For Serving
- Ice For Serving
- Mint Leaves (optional For Garnish)
- Note the recipe requires overnight steeping, so plan ahead.
- 1. In a medium saucepan, bring lemon rind, lemon juice, sugar, ginger and water to the boil over a high heat, stirring occasionally. Boil for about five minutes, until the sugar has dissolved.
- 2. Turn off the heat and let the mixture steep in the saucepan overnight.
- 3. The next morning, strain the mixture into a pitcher through a muslin cloth or sieve.
- 4. To serve, fill a glass with some ice. Add about 1/4 cup of syrup and top with mineral water. If desired, garnish with a few mint leaves.
