Triple Chip Cookies
- 3/4 cups Unsalted Butter, Softened At Room Temperature
- 1 cup Brown Sugar
- 1/4 cups White Sugar
- 1 whole Egg
- 2 teaspoons Vanilla Extract
- 2 cups All-purpose Flour
- 2 teaspoons Cornstarch
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 3 ounces, weight Dark Chocolate Chips
- 3 ounces, weight White Chocolate Chips
- 4 ounces, weight Butterscotch Chips
- Preheat oven to 350 F.
- Using a fork, beat together the butter and the sugars until smooth and fluffy.
- Add in the egg and beat until well combined. Add vanilla (and again) beat until well combined.
- Sift together flour, cornstarch, baking soda and salt in a separate bowl. Slowly stir into wet mixture.
- Stir in chocolate chunks. Chill in the fridge for about 30 minutes.
- Drop by tablespoons onto a greased baking lined with parchment paper and bake for 8-10 minutes, until golden brown around the edges.
