Mince Pies
- 8 ounces, weight Raisins
- 8 ounces, weight Golden Raisins Or Currants
- 8 ounces, weight Cooking Apples, Cut Into Small Cubes
- 4 ounces, weight Unsalted Butter, Cubed
- 1 whole Orange (Juice & Zest)
- 1 whole Lemon Juice + Zest
- 1 ounces, weight Slivered Almonds, Roughly Chopped
- 1-1/4 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Ground Coriander Seed
- 1/4 teaspoons Allspice
- 1/8 teaspoons Ground Ginger
- 3 Tablespoons Brandy
- 2 pounds, 3-1/3 ounces, weight Pie Dough/pastry
- This is a traditional British dessert or snack eaten around Christmas and New Year's. Great with a cup of tea or a glass of wine! We have adapted it here to use ingredients widely available in the USA.
- Mix all the ingredients except the brandy and pie dough, and allow to marinate in a covered baking dish in a cool place for at least 2 hours or overnight.
- After marinating, give it a stir and re-cover with foil, then bake at 225u0b0F for 3 hours.
- Allow to cool, stirring periodically, and then stir in the brandy.
- Makes enough mincemeat to fill 6 dozen muffin-pan sized mini-pies. This requires about 1 kilo of pastry (700g flour, 300g butter, splash of cold water-easy!).
- Make these for a holiday party! (Or any party. I'm considering replacing my birthday cake with these this year!)
