Very Good Cookies

  1. 1. Cream the butter and sugars.
  2. 2. Add the oil.
  3. 3. Mix in the egg, salt and vanilla.
  4. 4. Slowly add in the flour and quick oats.
  5. 5. Stir in the rice crispies, toffee chips and chocolate chips (I like to do this by hand so I don't break up all the rice crispies).
  6. Drop onto a sheet pan and bake at 350 degrees for 10-12 minutes or until slightly browned.
  7. Unlike many cookies, these are better once they've completely cooled. I'm not quite sure of the servings, but I used a 1-tablespoon cookie scoop and made around 3-4 dozen cookies.
