Raw Zucchini Salad
- 2-3 Smalllish Zucchini
- 1/4 Walla Walla SWEET Onion OR 1/2 A Cup Of Another Sweet Onion
- Italian Dressing To Your Taste
- With a zester, stripe the zucchini, leaving partial peeling there, but making it look pretty and giving it texture.
- Cut zucchini length wise, then in angled julienne half circles.
- French cut the onion. This is just an angled cut to the onion. Walla Walla onions are huge, so a fourth of the onion is all that is needed for this size. But if you are using another type of SWEET onion, you only need about 1/2 a cup of onion.
- Break apart onion pieces, place in a bowl with the zucchini, toss together with some Italian dressing, to your taste.
- Let marinate about 10-15 min. before eating. Yummy!
- My kids love to eat their zucchini this way! Mix it up by adding some yellow crook-neck squash to the mix too.
