Creamy Alphabet Soup
- 1 whole Onion
- 3 stalks Celery
- 1 cup Carrots
- 2 cloves Garlic
- 2 Tablespoons Vegetable Oil
- 1 can (14.5 Oz.) Diced Tomatoes
- 2 cups Vegetable Broth
- 1 teaspoon Italian Seasoning
- 1 teaspoon Salt
- 3/4 cups Cream
- 2 cups Alphabet Noodles, Cooked
- 1. Roughly chop onion, celery, carrots and garlic.
- 2. Heat vegetable oil in a pot. Add chopped veggies, stir and cook for 3 to 4 minutes.
- 3. Add tomatoes (with juice), vegetable stock, Italian seasoning and salt. Simmer for 30 minutes.
- 4. Meanwhile, cook noodles, drain and set aside.
- 5. Puree the mixture in a blender. Return to the pot, add cream and heat as needed. I usually use 35% cream with a bit of milk, but you can use any cream or even milk.
- 6. To serve, spoon the pureed soup into a bowl. Then heap the noodles in a pile in the center of the bowl. Enjoy!
