Apricot Bars
- 1 2/3 c. dried apricots, rinsed quickly and dried
- 1 2/3 c. sugar
- zest of 3 lemons
- 5 large eggs
- 3/4 c. lemon juice
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- Finely
- chop apricots, lemon zest and sugar, reserve the mixture.
- Add the eggs and whip until they are light.
- When the cookie
- base
- is
- baked, proceed by adding the chopped apricots and
- the
- baking
- powder/salt
- to
- eggs
- and
- add
- lemon juice. Carefully and evenly pour apricot/egg mixture on top of the hot cookie base
- (do
- this
- by
- pouring
- the apricot mixture onto a spatula and
- letting
- the liquid fall from the spatula onto the cookie base).
- Bake for 25 minutes.
- If the top is not as brown as you would like it to be, turn the broiler on; you must watch very closely.
- When
- they
- are
- done,
- let
- cool,
- cut, using a downward
- motion
- only.
- To keep, cover with parchment paper or brown paper.
- Saran
- Wrap
- will ruin the tops of the bars.
- You may sprinkle finished bars with powdered sugar.
