Chocolate Mayonnaise Cake

  1. In large bowl, beat the mayonnaise, sugar, and vanilla until smooth.
  2. Combine the flour, cocoa, baking soda, and salt in a small bowl; add to mayonnaise mixture alternately with water, beating well after each addition.
  3. Pour into a greased 9-inch square baking pan. Bake at 350u0b0 for 25-30 mins. or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  4. Icing:
  5. In a small bowl, beat 2 T softened butter until light and fluffy. Gradually beat in the 1-1/2 C powdered sugar, 2 T cocoa, 2 T warm milk, 1 t vanilla extract, and the pinch of salt until spreading consistency and can hold a peak.
  6. Frost cake. Top with nuts or sprinkles if desired.
  7. Store in refrigerator.
  8. *When preparing the icing, add dry ingredients alternated by milk. Mix well after adding each. This will give you a smoother, better mixed icing.
