Lentil Salad
- 2 1/2 c. water
- 3/4 c. dried lentils, rinsed and picked over
- 1/2 small red onion, chopped
- 1/2 Tbsp. chopped fresh thyme (less if it's dried)
- 1/4 tsp. ground allspice
- 2 Tbsp. red wine vinegar
- 1/2 Tbsp. Dijon-style mustard
- 2 1/4 tsp. olive oil
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1/8 c. chopped fresh parsley (less if dried)
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 1/2 Tbsp. brown sugar
- 3/4 Tbsp. white sugar
- 1 Tbsp. ground ginger
- 1/8 tsp. garlic powder
- 3 Tbsp. soy sauce
- 1 Tbsp. cider vinegar
- Place in long shallow dish for one hour turning frequently.
