Chocolate Sugar Cookies
- FOR COOKIES
- 2-3/4 cups All-purpose Flour
- 3/4 cups Unsweetened Cocoa Powder
- 1/2 teaspoons Salt
- 1 teaspoon Baking Powder
- 1 cup Butter, Softened To Room Temperature
- 2 whole Eggs
- 1-3/4 cup White Sugar
- 2 teaspoons Vanilla Extract
- For Icing
- 4 cups Powdered Sugar, Sifted
- 3 Tablespoons Meringue Powder
- 1/2 teaspoons Almond Extract
- 2 Tablespoons To 3 Tablespoons Milk
- * Preparation time does not include chilling time.
- Sift Flour, Cocoa Powder, Salt and Baking Powder together. Set aside.
- Cream butter, eggs, and sugar together until light and fluffy. Add vanilla extract and slowly stir in dry ingredients. When combined wrap in plastic wrap and chill 1 hour.
- Preheat oven to 350 degrees. Roll chilled dough to 1/2 inch thick and cut into desired shapes. Bake in preheated oven 10-12 minutes.
- They are quite delicious plain or decorate with royal icing:
- Meringue Powder is available at Walmart or Bulk Food Stores. To make the icing: Combine Powdered Sugar and Meringue Powder. Add Almond Extract. Slowly stir in enough milk to reach desired spreading consistency.
