Yam Omelette

  1. In a small bowl, beat the eggs until well mixed. Add the Knorr seasoning and mix again until it dissolves into the egg. Add boiled yam and chopped scallions and mix it all together. Add chopped onions, tomatoes and sliced black olives. This is your omelette mix. Make sure it is mixed well.
  2. In a medium sized pan, heat olive oil on medium heat for 2 minutes.
  3. Pour the omelet mix into the hot pan and let it fry on low heat for 5 minutes. Flip it very carefully with a spatula and let the other side fry for 3 minutes. Turn the heat off and let the omelet cool off in the pan for 3 minutes. Prepare to serve.
