Lunchbox Muffins
- 1 cup Flour
- 1-1/4 Tablespoon Baking Powder
- 1/4 teaspoons Salt
- 1/2 Tablespoons Sugar
- 1 whole Egg
- 1/4 cups Milk (plus More If Batter Is Dry)
- 25 grams Melted Butter
- 1/2 whole Red Pepper, Diced
- 35 grams Ham Cut In Strips
- 1 bunch Spring Onion, Finely Chopped
- 50 grams Grated Cheese (Parmesan Or Cheddar Are Best)
- Preheat the oven to 400 F.
- Mix the flour, baking powder, salt and sugar in one bowl and the egg, milk and melted butter into another.
- Carefully blend the liquids into the dry ingredients, making sure there are no lumps. Add more milk if the batter is dry.
- Add the peppers, meat, onion and cheese, and mix well.
- Pour the batter into 4 large muffin cups and bake for 15 - 20 minutes.
- These freeze well. Get creative with the fillings and find your own favorites. Corn flour can be substituted.
