Cannellini Sausage Kale Soup

  1. Heat oil in a large pot or Dutch oven. Add sliced shallot and saute until translucent, 2 minutes. Add minced garlic and saute until fragrant, another 2 minutes.
  2. Add sausage, carrots, celery and spices (salt, paprika, thyme). Saute, stirring often, for 5 minutes. Add broth and tomato paste. Cover and let it simmer for 10 minutes.
  3. Add kale and cannellini beans. Turn heat down to low, cover and simmer for an additional 5-6 minutes.
  4. Serve hot with a baguette or crackers.
