Cannellini Sausage Kale Soup
- 1 Tablespoon Olive Oil
- 1 whole Shallot, Sliced
- 4 cloves Garlic, Minced
- 12 ounces, weight Fully Cooked Chicken Sausage, Cut Into Chunks
- 1 cup Carrots, Sliced
- 1/2 cups Celery, Sliced
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Paprika
- 1/2 teaspoons Thyme
- 5 cups Vegetable Broth
- 1 Tablespoon Tomato Paste
- 2 cups Kale, Roughly Chopped
- 1 can (15 Oz. Size) Cannellini Beans
- Heat oil in a large pot or Dutch oven. Add sliced shallot and saute until translucent, 2 minutes. Add minced garlic and saute until fragrant, another 2 minutes.
- Add sausage, carrots, celery and spices (salt, paprika, thyme). Saute, stirring often, for 5 minutes. Add broth and tomato paste. Cover and let it simmer for 10 minutes.
- Add kale and cannellini beans. Turn heat down to low, cover and simmer for an additional 5-6 minutes.
- Serve hot with a baguette or crackers.
