Coconut Pumpkin Bars
- 1 c. flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 15 Kellogg's Frosted Mini-wheats cereal, crushed to measure 1 1/3 cup
- 1/4 c. milk
- 1 c. pumpkin
- 1 tsp. vanilla
- 1/2 c. shortening
- 1/2 c. brown sugar
- 1 egg
- Stir together flour, baking powder, soda, salt, cinnamon and nutmeg.
- Set aside.
- In a medium bowl, stir crushed cereal, milk, pumpkin and vanilla.
- Let stand for 15 minutes.
- Meanwhile, in another bowl, beat shortening and brown sugar until light and fluffy.
- Add egg and beat well.
- Stir in pumpkin mixture and add flour mixture.
- Mix until well combined.
- Spread evenly in greased 9x13-inch pan.
