Banana Oat And Walnut Muffins

  1. Preheat oven to 375. Grease muffin pan or use muffin liners to line 12 muffin cups.
  2. Mix first six ingredients (buttermilk through sugar) together in a large bowl. (Note that 3/4 cup of mashed banana is usually about two medium very ripe bananas)
  3. Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined.
  4. Portion into 12 muffins in prepared pan.
  5. Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean!
