Banana Oat And Walnut Muffins
- 3/4 cups Buttermilik
- 3/4 cups Mashed Ripe Banana
- 1 whole Egg
- 2 Tablespoons Vegetable Oil
- 1 teaspoon Vanilla
- 1/2 cups Granulated White Sugar
- 1-1/2 cup AP (all-purpose) Flour
- 1/2 cups Quick Cooking Oats
- 3 Tablespoons Walnuts, Toasted And Chopped
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/4 teaspoons Cinnamon
- 1/4 teaspoons Salt
- Preheat oven to 375. Grease muffin pan or use muffin liners to line 12 muffin cups.
- Mix first six ingredients (buttermilk through sugar) together in a large bowl. (Note that 3/4 cup of mashed banana is usually about two medium very ripe bananas)
- Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined.
- Portion into 12 muffins in prepared pan.
- Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean!
