Lime Ring Salad
- 1 (3 oz.) pkg. lime flavor gelatin
- 2 c. boiling water
- 1 drop green food color
- 16 large marshmallows
- 1 (8 oz.) can crushed pineapple
- 3 oz. cream cheese, softened
- 1 c. heavy cream, whipped
- 1 c. chopped pecans
- Stir gelatin into 1 cup boiling water until dissolved.
- Add food color.
- In 2-quart saucepan over low heat, stir marshmallows with remaining 1 cup boiling water until melted.
- Add to gelatin. Using mixer at medium speed, gradually beat undrained pineapple into cream cheese until blended.
- Stir in gelatin mixture.
- Fold in whipped cream and pecans.
- Spoon into 6 1/2 ring mold.
- Cover; chill until set.
- Unmold onto serving plate.
- If desired, dip seedless red grapes in sugar; shake off excess.
- Pile into center of ring.
- Makes 12 servings.
