Vanilla Ice Cream Cake
- FOR THE CAKE:
- 1/2 cups Butter Or Shortening
- 1-1/2 cup Sugar
- 2-1/2 cups Flour
- 3-1/4 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 cup Milk
- 4 whole Egg Whites
- 1 Tablespoon Vanilla

- FOR THE GLAZE:
- 3/4 cups Butter
- 1 cup Sugar
- 4 Tablespoons Milk
- 1-1/2 Tablespoon Vanilla
- 1 pinch Salt
- For the cake:
- Preheat your oven to 350F. Cream the 1/2 cup butter and 1 1/2 cups sugar, and then just add the rest of your cake ingredients. Mix on the lowest speed until just combined, then up the speed 1-2 notches and mix for 3 minutes. Pour into a greased 9x13 pan and bake at 350F for 30-40 minutes, or until a toothpick comes out clean. Immediately pour on glaze, recipe below.
- For the glaze:
- Melt the last 5 ingredients together over medium heat, stirring to keep the sugar from burning on the bottom of the pan. Bring the mixture to a rapid boil and cook for 2 more minutes. Then pour immediately over the cake.
- Let cake sit and cool for at least an hour before digging in, although I would recommend letting it cool completely.
