Green Salad With Warm Rice & Lemony Dressing
- LEMON DRESSING
- 1/4 cups Freshly Squeezed Lemon Juice
- 1 Tablespoon Dijon Mustard
- 1/4 cups Extra Virgin Olive Oil
- 1 Tablespoon Capers With Liquid
- Salt
- Freshly Ground Black Pepper

- 1 cup White Rice
- 1 bunch Green Goodness (Romaine, Green Leaf Lettuce, Arugula - Whatever You Want!)
- The key to this salad is having the lettuce and the dressing cold, so the contrast is perfect with the warm white rice. I like to wash the salad and make the dressing in advance, so they get nice and cool in the fridge.
- 1. Combine lemon juice and mustard in a small bowl with whisk. Slowly whisk in the olive oil and continue whisking until it gets smooth and creamy. Add the capers and season to your taste with salt and pepper.
- 2. Cook one cup of white rice according to the package instructions.
- 3. When the rice is ready, spoon on top of the cold, crisp green salad and top with the cool lemony dressing.
