Vanilla Glazed Apple Cinnamon Muffins
- FOR THE MUFFINS:
- 1/2 cups Flour (I Used Whole Wheat White Blend)
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 1 pinch Nutmeg
- 1/4 cups Milk
- 1 whole Egg, Beaten
- 1 Tablespoon Butter, Melted
- 1 Tablespoon Sugar
- 1/2 whole Apple, Finely Chopped Or Grated, Peel On
- FOR THE GLAZE:
- 1/2 cups Powdered Sugar
- 1 teaspoon Vanilla
- 1 teaspoon Milk
- Mix dry ingredients together. Combine milk and egg, add to the dry ingredients.
- Add melted butter and mix well. Combine the sugar with chopped apples. Stir apples into the batter.
- Fill 3-4 greased muffin tins and bake at 350u0b0F for about 20 minutes or until tops and golden brown and spring back when pressed.
- For the glaze, combine powdered sugar with vanilla and milk, adding a teaspoon of milk at a time until glaze reaches desired consistency. Drizzle glaze over the muffins.
