Crab Meat Casserole
- 1/4 c. butter
- 3 Tbsp. flour
- 2 c. milk
- 2 Tbsp. minced onion
- 1/2 tsp. celery salt
- 1/4 tsp. grated orange rind
- 1 Tbsp. chopped parsley
- 1 Tbsp. minced green pepper
- 1 tsp. salt
- dash of red pepper
- 1 egg, beaten
- 1/2 c. fresh bread crumbs
- 1/2 c. grated sharp cheese
- 3 c. fresh crab meat or frozen and thawed
- 4 tomato slices
- About 1 1/2 hours before serving, melt butter in double boiler.
- Stir in flour until smooth, then milk.
- Cook, stirring until thickened.
- Add onion, orange rind, celery salt, parsley, green pepper, salt and red pepper.
- Stir egg mixture into rest of sauce.
- Flake crab meat and fold into sauce.
- Turn into 1 1/2-quart casserole.
- Toss bread crumbs with cheese, then sprinkle around top edge of casserole.
- Bake 10 minutes.
- Arrange tomato slices down center of casserole.
- Bake few minutes longer at 350u0b0 until crumbs are golden brown.
