Cherry-Orange Salad
- 1 (6 oz.) can frozen orange juice, thawed (undiluted)
- 1 1/4 c. water
- 1 (3 oz.) pkg. cherry jello
- 1 (3 oz.) pkg. orange jello
- 2 carrots, grated (optional)
- 2 c. crushed pineapple, drained
- 4 medium apples, grated
- 1 c. whipping cream, whipped
- 2 c. miniature marshmallows
- 1 c. chopped pecans (optional)
- Combine orange juice and water in saucepan.
- Stir well and bring to a boil.
- Combine cherry and orange jello in a mixing bowl.
- Add hot orange juice mixture, stirring until gelatin dissolves.
- Set aside to cool while preparing the other ingredients.
- Stir in carrots, fruit and nuts.
- Chill until mixture is consistency of unbeaten egg white.
- Fold remaining ingredients into gelatin.
- Chill until firm.
