Strawberry Pretzel Salad
- 6 oz. coarsely crushed pretzels
- 1/2 c. W. W. margarine, melted
- 2 Tbsp. sugar
- 1 c. part-skim Ricotta cheese
- 10 pkg. artificial sweetener
- 8 oz. pkg. lite whipped topping
- 1 (6 oz.) pkg. strawberry sugar-free gelatin
- 4 c. unsweetened strawberries
- 2 c. boiling water
- Mix first 3 ingredients together and put in bottom of 9 x 13-inch pan; bake 8 minutes at 400u0b0; cool completely.
- Beat Ricotta and sweetener together.
- Fold in whipped topping. Carefully spread over pretzel layer.
- Dissolve gelatin in boiling water.
- Add strawberries and chill until thickened.
- Spoon over cheese layer; let chill overnight or until completely thickened. Makes 8 servings.
