Aunt Betty’S Egg & Cheese Brunch

  1. Preheat oven to 375 degrees (for a glass pan).
  2. Dice the ham OR fry and crumble the bacon. Set aside for a little while. If you wanna get fancy, you could use pancetta.
  3. In microwave, melt the butter in a 9x13 glass pan.
  4. In a large bowl, beat the eggs slightly. Add the baking powder to the flour and blend. Add both to the egg mixture. Beat again. Then add meat, cottage cheese, chiles, and grated Jack cheese, mixing until just blended.
  5. Pour this mixture into the pan and bake it for 30 minutes, or until slightly browned. Remove from the oven and - THIS IS THE MOST DIFFICULT PART - let it sit for about 5 minutes to make sure it's set.
