Cranberry & Apple Relish
- 2 Tablespoons Water
- 3 whole Large Fuji Or Gala Apples, Cored And Chopped
- 4 bags Fresh/Frozen Cranberries, (12-oz. Each)
- 1 teaspoon Cinnamon
- 1 dash Black Pepper
- 3 whole Navel Oranges, (zest 1 1/2 Of Them & Juice All 3)
- 1 Tablespoon Orange Liqueur
- 3 teaspoons Fresh Lemon Juice
- 2-1/2 cups Sugar
- 3 teaspoons Fresh Ginger, Minced
- There are 2 ways to make this recipe.
- For the easy method:
- Add all of the ingredients into a large pot, put the lid on and cook on medium-high heat for about 20-30 minutes. If you want the fruit to be mushier, cook a little longer (10 minutes more).
- For the moderate method:
- In a large pot add 1 tablespoon of water, apples, cranberries, cinnamon, pepper, orange juice & orange liqeur. Set aside.
- In a smaller saucepan, add lemon juice and sugar and cook over medium-low heat. You may need to add a little more of the water if it's too dry. Cook until it begins to turn golden and caramelize. Next add the orange zest and ginger. Turn off the heat.
- Pour the caramelized sugar mixture all over the cranberries and apples. Mix well, cover and cook over medium-high heat for 20-30 minutes. If you want the fruit to be mushier, cook a little longer (10 minutes).
