Smoked Salmon And Quinoa Salad With Radishes And Beans
- 1 can (14 Oz. Size) Red Beans
- 1/2 Red Onion, Chopped
- 10 Cherry Tomatoes, Halved
- 8 Radishes, Sliced And Halved
- 2 ounces, weight Baby Spinach
- 5 ounces, weight Smoked Salmon, Sliced
- 1/2 cups Quinoa, Cooked And Cooled
- FOR THE DRESSING:
- 2 Tablespoons Sesame Oil
- 1 teaspoon Soy Sauce
- 1 teaspoon Balsamic Vinegar
- 1 clove Garlic, Chopped
- Place red beans, onion, tomatoes, radishes, spinach, smoked salmon, and quinoa in a bowl and toss well.
- For the dressing, combine sesame oil, soy sauce, balsamic vinegar, and garlic in a small jar with a lid and shake to blend. Pour the dressing over the salad and toss.
