Ultimate Tortellini Stew
- 3 whole Mild Italian Sausages, Crumbled
- 3 Tablespoons Olive Oil
- 1 whole Onion, Diced
- 3 whole Bell Peppers (any Color), Diced
- 1 whole Sweet Potato Or Yam, Cubed
- 1 whole Yellow Squash, Cubed
- 1 whole Zucchini, Cubed
- 1 package Frozen Spinach, Chopped
- 1 can Diced Tomatoes
- 1 can Sliced Mushrooms
- 1 can Black Beans, Rinsed
- 1 can Corn
- 1 jar Spaghetti Sauce
- 2 cans Chicken Stock
- 2 whole Frozen Chicken Breasts
- 1 package Frozen Tortellini
- Parmesan Cheese
- 1. In a very large stock pot, saute onion and sausage in olive oil until onions turn clear.
- 2. Add all other diced fresh veggies and spinach. Saute until tender.
- 3. Add all other ingredients except tortellini and Parmesan cheese. Rinse the black beans but include the liquid from the other canned veggies. Just toss the frozen chicken breasts in whole. By the time the stew is done simmering, the breasts will be perfectly cooked. Bring to a boil then reduce heat and simmer for at least 1 hour.
- 4. 20 minutes before you're ready to serve, add the tortellini and continue simmering.
- 5. When done, remove the chicken breasts, shred with two forks and return to stew.
- 6. Ladle stew into bowls, top with Parmesan, and serve with garlic bread or french bread for dipping!
