Ultimate Chocolate Brownies
- 1/2 pounds, 7/8 ounces, weight Salt Reduced Butter
- 1 Tablespoon Vanilla Essence
- 2 cups Sugar
- 4 whole Eggs
- 1 cup Plain Flour
- 2/3 cups Cocoa Powder
- 1 teaspoon Baking Powder
- 1 pinch Sea Salt
- 1 pinch Cardamom (optional)
- 5-1/3 ounces, weight Dark Chocolate, Broken Into Squares
- Preheat oven to 180 degrees C. Line a brownie tin.
- Mix together the butter, vanilla and sugar in a large bowl, till combined. Sugar should be partially dissolved in the butter.
- Add eggs and stir till just combined.
- Sift together flour, cocoa powder, baking powder, salt and cardamom (I find the cardamom helps really bring out the chocolate flavour, but it's totally optional). Add to the butter mixture and mix till ingredients are just combined and there are no lumps.
- Pour mixture into the tin. Break up the block of chocolate and scatter pieces on top.
- Bake for 40 minutes. Leave in the tin to cool for 15 minutes, then remove and cut into 12 slices. Serve warm.
