Savoury Cheese & Chive Scones
- 1/2 cups Butter
- 2 cups Plain Flour
- 1 cup Brown Flour
- 1 Tablespoon Plus 3/4 Teaspoon Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 3 cups Grated Cheese, Divided
- Finely Chopped Chives, To Taste
- Finely Chopped Parsley, To Taste
- 1 Egg
- 1/2 cups Milk, Plus 5 Tablespoons, Divided
- Preheat oven to 175u0b0C (about 350u0b0F) and lightly grease a large baking tray.
- Put the butter in the freezer for 10-15 minutes until it is really solid.
- In a large mixing bowl, mix flours, baking powder, salt and pepper. Using a butter knife, cut the butter into the flour mixture until butter is the size of peas. Stir in 2 1/2 cups cheese and chopped herbs.
- In another bowl, beat egg and 1/2 cup milk together. Add to the dry ingredients and mix until the dough can be formed into a ball.
- On a clean, floured surface, roll the dough out to about 1-inch thick. Cut however you like; I like pizza pieces or rounds. Place on a baking tray. Brush the tops with remaining milk, top with the remaining 1/2 cup grated cheese and bake for 20-25 minutes until golden brown on top.
