Savoury Cheese & Chive Scones

  1. Preheat oven to 175u0b0C (about 350u0b0F) and lightly grease a large baking tray.
  2. Put the butter in the freezer for 10-15 minutes until it is really solid.
  3. In a large mixing bowl, mix flours, baking powder, salt and pepper. Using a butter knife, cut the butter into the flour mixture until butter is the size of peas. Stir in 2 1/2 cups cheese and chopped herbs.
  4. In another bowl, beat egg and 1/2 cup milk together. Add to the dry ingredients and mix until the dough can be formed into a ball.
  5. On a clean, floured surface, roll the dough out to about 1-inch thick. Cut however you like; I like pizza pieces or rounds. Place on a baking tray. Brush the tops with remaining milk, top with the remaining 1/2 cup grated cheese and bake for 20-25 minutes until golden brown on top.
