Mango Semolina Cake
- 1 cup Semolina
- 3/4 cups Sugar
- 1/2 teaspoons Ground Cardamom (optional)
- 1 teaspoon Baking Powder
- 1/4 cups Neutral-tasting Oil
- 1 cup Mango Pulp
- 1/4 cups Chopped Nuts, For Garnish
- Preheat oven to 170u0b0C (340u0b0F).
- Mix semolina with sugar, cardamom and baking powder. Add oil and mix well. Add mango pulp and mix again. Let it sit for 15 minutes.
- Pour batter in a greased loaf pan or 6-inch round pan and garnish with nuts. Bake for 30-35 minutes. Keep a close watch after 25 minutes; if it starts browning too quickly, lower the temperature a bit.
- Check with a toothpick in the center of the cake to see if it is properly baked. If it comes out clean, remove immediately. If it is baked longer, the cake will develop a crust on top.
- Allow to cool completely. Cut and serve.
