Society Chip Pickles
- 1 bunch Fresh Small-medium Sized Cucumbers
- 1 quart White Vinegar
- 8 cups Sugar
- 2 ounces, weight Mixed Pickling Spice (1/2 Bottle)
- 2 Tablespoons Coarse Salt
- These pickles take 8 days from start to finish, but they're well worth the time.
- The recipe may be doubled to accommodate a large batch of cucumbers. Just be sure to have enough brine to cover whatever amount you have.
- Wash whole cucumbers and put in a deep roasting pan or stock pot.
- Pour boiling water over to cover for 4 mornings.
- On the 5th day, drain cucumbers and slice 1" thick.
- Put spices in a cloth bag.
- Bring brine/syrup ingredients to a boil and pour over slices.
- Repeat for 2 days.
- On 8th day, put pickles in prepared canning jars and pour boiling brine/syrup over to within 1/4-1/2" of rim.
- Seal.
- No water bath is necessary.
