Society Chip Pickles

  1. These pickles take 8 days from start to finish, but they're well worth the time.
  2. The recipe may be doubled to accommodate a large batch of cucumbers. Just be sure to have enough brine to cover whatever amount you have.
  3. Wash whole cucumbers and put in a deep roasting pan or stock pot.
  4. Pour boiling water over to cover for 4 mornings.
  5. On the 5th day, drain cucumbers and slice 1" thick.
  6. Put spices in a cloth bag.
  7. Bring brine/syrup ingredients to a boil and pour over slices.
  8. Repeat for 2 days.
  9. On 8th day, put pickles in prepared canning jars and pour boiling brine/syrup over to within 1/4-1/2" of rim.
  10. Seal.
  11. No water bath is necessary.
