Lemony Chicken And Orzo Salad

  1. 1. Put pot of water on to boil.
  2. 2. While waiting for water to boil, chop all squash. I cut lengthwise, then slices.
  3. 3. Cook orzo according to package directions. Add squash to pasta/water during the last 2 minutes of cooking time.
  4. 4. While pasta is cooking, mix lemon juice and pesto.
  5. 5. Drain and immediately run under cold water to stop cooking.
  6. 6. Toss pasta and squash with tomatoes and 1/2 of lemon/pesto mixture. Chill.
  7. 7. Pound chicken breast to 1/2 inch thickness.
  8. 8. Pour remaining lemon/pesto mixture over chicken breast and marinate for at least a 1/2 hour up to several hours.
  9. 9. Grill chicken breast; rest for 5 minutes then slice and serve over pasta and squash. Top with pine nuts.
