Couscous Fruit Salad
- 1 bunch Green Onions (5-6 Stalks)
- 4 cloves Garlic, Crushed
- 1 Tablespoon Olive Oil
- 2-1/4 cups Water
- 6 whole Pitted Dates, Chopped
- 3 ounces, weight Craisins (1/2 Package)
- 1/2 cups Golden Raisins
- 1/4 cups Peanuts (shelled)
- 1-1/2 cup Middle Eastern Couscous (large Grain)
- 1 Tablespoon Cilantro, Chopped
- 1 whole Mango, Peeled And Chopped
- Saute onions and garlic in a small amount of olive oil for 1-2 minutes. Add water and bring to a boil. Stir dates, Craisins, raisins and peanuts into water and allow to return to a boil. Add couscous and cilantro, mix, cover, and let simmer over low heat, stirring occasionally, until nearly all the water is absorbed. While there is still a bit of water remaining, stir in mango, cover and keep simmering until all the water is absorbed and the couscous is tender. Serve!
