Fig & Honey Granola
- 2-1/2 cups Old Fashioned Oats
- 2/3 cups All-purpose Flour
- 1/2 cups Dark Brown Sugar
- 1/3 cups Chopped Almonds
- 2 teaspoons Allspice
- 1/2 cups Honey
- 1/2 cups Coconut Oil
- 1 teaspoon Almond Extract
- 1/2 cups Chopped, Dried Figs
- Preheat oven to 250u0b0F. Line baking sheet with parchment paper.
- In a large bowl, combine oats, flour, brown sugar, almonds, and allspice. Stir well.
- In a separate bowl, combine honey and coconut oil. Microwave until melted. Stir and then add almond extract. Pour melted honey mixture over oat mixture. Stir.
- Spread granola mixture onto baking dish. Bake for about 60 minutes. Stir briefly, allowing for clumps (that's the good part). Add chopped figs, then allow it to cool.
- Break up any overly large clusters. Store in airtight container. I recommend mason jars.
