Tuesday’S Taco Soup

  1. Empty each can into a large stock pot. Be sure to rinse the beans first. Add enough water to cover all ingredients and add 1/2 of the taco seasoning package.
  2. Simmer on low while you start browning the ground beef in a large skillet.
  3. Dice peppers and onions.
  4. Saute peppers & onions. Add to ground beef after it is completely cooked. Add 1/4 Cup of water and the remaining taco seasoning to skillet. Let this all simmer together for five minutes or so.
  5. Add beef mixture to stock pot. Add a little more water if you need to, just enough to cover all ingredients.
  6. Let soup simmer on low for 30-45 minutes. This will get all the flavors blended and get everybody's tummies rumbling!
  7. Serve with shredded cheddar cheese, sour cream, and tortilla chips of choice.
  8. *If you plan ahead, you can use dry beans, soaked the night before. Make adjustments according to your family's tastes - more onions, less peppers, etc.
  9. *This is our traditional meal before Halloween trick-or-treating.
