Banana Chocolate Peanut Muffins
- 2 whole Eggs
- 1 cup Granulated Sugar
- 1/2 cups Canola Oil
- 1-1/2 cup Flour, All Purpose
- 1/2 cups Peanut Flour (Deffatted Peanuts)
- 1/2 teaspoons Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 cups Water
- 2 whole Large Bananas, Mashed
- 1 teaspoon Vanilla Extract
- 1/2 cups Chocolate Chips, Mini Are Best
- Mix together the eggs and sugar until light; mix in oil.
- In a small bowl, stir dry ingredients together; add to the egg mixture.
- Add water, bananas, and vanilla; mix well. Batter will not be thick.
- Stir in chocolate chips.
- Line 18 muffin tins with paper liners, or spray with non-stick cooking spray. Fill 2/3 full of batter.
- Bake at 350F for 20-25 minutes, until golden brown.
