Banana Chocolate Peanut Muffins

  1. Mix together the eggs and sugar until light; mix in oil.
  2. In a small bowl, stir dry ingredients together; add to the egg mixture.
  3. Add water, bananas, and vanilla; mix well. Batter will not be thick.
  4. Stir in chocolate chips.
  5. Line 18 muffin tins with paper liners, or spray with non-stick cooking spray. Fill 2/3 full of batter.
  6. Bake at 350F for 20-25 minutes, until golden brown.
