Grated Italian Zucchini
- 1 Tablespoon Olive Oil
- 1 Onion, Chopped
- 6 cloves Garlic, Minced
- 2 cups Grated Zucchini
- 1 can (14.5 Oz. Size) Diced Petite Tomatoes
- 1 can (6 Oz. Size) Tomato Paste
- 1 Tablespoon Italian Herb Seasoning
- 1 teaspoon Oregano
- Salt And Pepper, to taste
- Put the olive oil in a skillet and heat over medium heat. Then add the onion and cook until it begins to appear translucent. Add the garlic and cook for a minute. Add the zucchini to the skillet. Stir and continue cooking over a medium heat.
- Add the tomatoes and tomato paste. Stir until all is blended. Add the Italian seasoning and the oregano. Stir. Add salt and pepper to taste. Let this simmer for about 20 minutes or until the zucchini is cooked. Serve.
