Chocolate Cheesecake Pie
- 1-1/2 cup Cream Cheese, Softened
- 4 Tablespoons Double Cream
- 1 cup Caster Sugar
- 1/2 cups Cocoa Powder, Unsweetened
- 1/2 teaspoons Ground Cinnamon
- 3 whole Eggs
- 5 ounces, weight Amaretti Or Crushed Graham Cracker Biscuits, Crushed
- 1/3 cups Unsalted Butter
- 1 bag Homemade Whipped Cream, For Piping Decoration
- 1/2 cups Chocolate Shavings, For Decoration
- Preheat your oven to 350 F or 180 C.
- Make the base by mixing the crushed biscuits with the melted butter. Press the mixture evenly over the bottom and sides of a 9-inch pie pan. Bake the base for 8 minutes and them remove to cool.
- Leave the oven ON and put the a baking sheet inside to heat.
- Now, beat the cheese and cream in a bowl until smooth. Beat in the sugar, cocoa and cinnamon until blended, then add the eggs, one at a time, beating just long enough for them to combine.
- Pour the filling into the pie pan over the baked base and bake the whole thing on the already-hot baking sheet for 25 to 30 minutes. It should look set and not jiggly.
- Remove and cool. The cheesecake will sink as it cools.
- Once it is cool enough, pipe the sides with whipped cream and fill the middle with chocolate shavings (or curls, if you like).
- You will NOT regret this one. Well, maybe a little.
