Spinach Roll(Superb Tasting And Beautiful To Serve)

  1. Butter a 10 x 15-inch pan and line with buttered foil. Sprinkle foil with bread crumbs.
  2. In a bowl, combine cooked spinach, salt, pepper and nutmeg.
  3. Stir in 6 tablespoons butter. Beat in egg yolks, one at a time.
  4. Beat egg whites until they form soft peaks and fold into spinach mixture.
  5. Spoon mixture into prepared pan, spreading gently into a thin layer.
  6. Sprinkle with Parmesan cheese.
  7. Bake at 350u0b0 for 15 minutes or until sides pull away from pan.
  8. Remove from oven and let stand a few minutes. Cover with buttered foil and invert pan.
  9. Remove pan and pull off foil.
  10. Use a spatula if spinach sticks a little. Spread with mushrooms that have been sauteed in 2 tablespoons butter. Sprinkle with Swiss cheese.
  11. Roll up in jelly roll fashion. Sprinkle top with a little grated Swiss cheese.
  12. Serves 8.
