Healthy (And Delicious) Banana Muffins!
- 1 Tablespoon Flax Seed Meal
- 3 Tablespoons Water
- 2 cups Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoons Salt
- 1 cup Unsweetened Apple Sauce
- 1/2 cups Honey
- 1 Egg, Beaten
- 3 Ripe Bananas, Mashed
- 1/4 cups Chopped Walnuts (optional)
- Preheat oven to 350u0b0F and place muffin liners in 2 standard muffin tins. Combine flax seed meal with the water in a small bowl. Stir and place in the fridge for 15 minutes.
- In a large bowl, whisk flour, baking soda, and salt. In a smaller bowl, combine applesauce, honey, egg, flax seed mixture and bananas.
- Add liquid ingredients all at once to dry ingredients and mix gently. Do not over-mix, only until just moistened. Fold in walnuts if desired. Transfer to pans and bake. Standard muffins will bake for16 minutes. Loaves will take about 1 hour. Mini muffins need only about 8 minutes.
- When a toothpick inserted in the middle comes out clean, remove from the oven and allow to cool about 5 minutes in the pan. Transfer to wire rack for complete cooling. Store in the fridge or freezer-if they don't disappear first! Enjoy!
