Healthy (And Delicious) Banana Muffins!

  1. Preheat oven to 350u0b0F and place muffin liners in 2 standard muffin tins. Combine flax seed meal with the water in a small bowl. Stir and place in the fridge for 15 minutes.
  2. In a large bowl, whisk flour, baking soda, and salt. In a smaller bowl, combine applesauce, honey, egg, flax seed mixture and bananas.
  3. Add liquid ingredients all at once to dry ingredients and mix gently. Do not over-mix, only until just moistened. Fold in walnuts if desired. Transfer to pans and bake. Standard muffins will bake for16 minutes. Loaves will take about 1 hour. Mini muffins need only about 8 minutes.
  4. When a toothpick inserted in the middle comes out clean, remove from the oven and allow to cool about 5 minutes in the pan. Transfer to wire rack for complete cooling. Store in the fridge or freezer-if they don't disappear first! Enjoy!
