‘Jimmy The Greek’ Pasta Salad
- 1 pound Dry Rotini Pasta
- 1 whole Red Bell Pepper
- 1 whole Green Bell Pepper
- 1 whole Large Red Onion
- 2 cups Sliced Ripe Olives
- 1 cup Sliced Green Olives
- 8 ounces, weight Feta Cheese Crumbles
- 1 cup Fresh Parsley, Minced
- 2 jars 6 Oz. Marinated Artichoke Hearts, Drained & Chopped
- 1/2 cups Olive Oil
- 1/3 cups Red Wine Vinegar
- 2 cloves Garlic, Minced
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 1/2 teaspoons Tarragon
- Salt And Pepper, To Taste
- 1. Cook pasta according to package directions. Cool.
- 2. Make dressing by whisking together olive oil, vineger and remaining spices. Pour over pasta.
- 3. Add chopped peppers, olives, onion, feta cheese, parsley and artichokes. Add salt and pepper to taste.
- 4. Mix well and refrigerate until well chilled.
