Triple Chocolate S’Mores Brownie Cups
- 2-1/2 cups Finely Ground Graham Cracker Crumbs
- 1/2 cups White Sugar
- 10 Tablespoons Butter, Melted
- 1 box Ghirardelli Triple Chocolate Brownie Mix. 18-20 Ounce Size
- Additional Required Ingredients Specified On The Box Mix (typically Water, Eggs And Oil)
- 8 whole Jumbo Marshmallows (or Enough To Cover 24 Cups If You Can't Find The Jumbo Ones)
- 1. Combine graham cracker crumbs, sugar and melted butter in a medium-sized bowl and mix until well blended. Press mixture into two 12-count lined cupcake pans. You only need about an inch of graham crackers in the bottom of the cupcake liners. Set the pans aside and do not pre-bake!
- 2. Preheat oven to 350 F. Make your brownie mix according to the directions on the box. I used Ghirardelli Triple Chocolate Brownie Mix because Costco sells the giant boxes and I happen to think it's the best brownie mix out there. You can also make your brownie mix from scratch. If you do this, then props to you.
- 3. Fill your unbaked graham cracker crusts with the raw brownie mix. Do not fill to the top-only 2/3 full. Bake at 350 F for 25 minutes until brownie is not liquid in the center. Remove the pans from the oven and turn the oven setting to broil.
- 3. Place marshmallows on all the brownies. I used the new jumbo-sized marshmallows (from Target) and cut each marshmallow into 3 pieces to get giant circles that fit perfectly on top of the brownies. You can also use mini marshmallows. Return to the oven for literally 1 or 2 minutes. Do not take your eyes off the marshmallows. Once they start geting brown remove them from the oven immediately. They will continue to brown for a couple seconds after remove them. Let cool and serve warm.
