Long Grain And Wild Rice Salad
- 1-1/2 cup Long Grain And Wild Rice (or Any White Rice)
- 3 cups Vegetable Or Chicken Stock
- 1 cup Cherry Tomatoes, Finely Diced
- 1 whole Green, Yellow, Red Or Orange Pepper, Finely Diced
- 2 whole Green Onions (Scallions), Finely Diced
- 2 Tablespoons Parsley, Dried
- 1/4 cups Lemon Juice (preferably Freshly Squeezed)
- 1/4 cups Olive Oil
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1. Cook rice in vegetable or chicken stock in a covered pot.
- 2. In a large bowl, combine cooked rice, tomatoes, bell pepper, green onions and parsley.
- 3. Combine lemon juice, olive oil, salt and pepper and stir into rice/vegetable mixture.
- 4. Taste and adjust seasonings if needed: if it needs a flavor boost, add more salt or lemon juice; if it tastes too tangy, add more parsley or black pepper.
- Refrigerate and serve cold. Enjoy!
