Long Grain And Wild Rice Salad

  1. 1. Cook rice in vegetable or chicken stock in a covered pot.
  2. 2. In a large bowl, combine cooked rice, tomatoes, bell pepper, green onions and parsley.
  3. 3. Combine lemon juice, olive oil, salt and pepper and stir into rice/vegetable mixture.
  4. 4. Taste and adjust seasonings if needed: if it needs a flavor boost, add more salt or lemon juice; if it tastes too tangy, add more parsley or black pepper.
  5. Refrigerate and serve cold. Enjoy!
