Boston Brown Bread
- 1 c. sifted all-purpose flour
- 1 c. white corn meal
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 3/4 tsp. baking soda
- 1 c. whole wheat flour
- 1 egg, slightly beaten
- 2 Tbsp. butter, melted
- 2/3 c. dark molasses
- 1 2/3 c. buttermilk
- 1 c. shredded Cheddar cheese
- 1/2 c. raisins
- 1 Tbsp. flour
- In a small bowl, sift together flour, corn meal, baking powder, salt and baking soda.
- Stir in wheat flour.
- Combine egg, butter, molasses and buttermilk.
- Add to dry ingredients along with cheese and stir only to blend.
- Toss raisins with the 1 tablespoon flour; stir into batter.
- Pour batter into a 9 x 5 x 2 3/4-inch buttered loaf pan.
- Cover top of pan with double thickness of aluminum foil.
- Place in shallow baking pan. Surround loaf pan with water.
- Bake in a preheated oven of 350u0b0 for 2 hours.
- Remove from oven and cool for 10 minutes.
- Serve warm with butter.
- Makes 1 loaf.
