Triple Berry Salad With Halloumi Cheese
- 1/2 cups Blueberries, Washed
- 1/2 cups Blackberries, Washed
- 1/2 cups Strawberries, Washed, Hulled And Chopped
- 2 teaspoons Balsamic Vinegar
- 1 Tablespoon Olive Oil
- Salt And Pepper, to taste
- 3 ounces, weight Block Of Halloumi Cheese
- 1 teaspoon Butter
- Olive Oil (enough To Cover The Bottom Of Your Skillet)
- 3 cups Spring Mix, Baby Spinach And Baby Butter Lettuce
- Prep and wash the berries. Set aside.
- Using a whisk and small bowl, whisk together vinegar and olive oil. Add salt and pepper to taste.
- How to prepare halloumi (instructions from chef Michael Foley): Cut the cheese into 1/2-inch thick slices. Heat a non-stick pan on low heat wih 1/8 inch of olive oil. Add the cheese and 1 teaspoon of butter. Cook until the first side is golden brown then gently flip the cheese and cook until the other side is golden brown. Remove it from the pan and allow cheese to cool slightly on a plate lined with paper towels.
- Toss salad greens and berries on your plate. Top with cheese and drizzle dressing over the top.
