Sausage, Artichoke, And Tortellini Soup
- 1 pound Italian Sausage
- 1 Tablespoon Italian Seasoning
- 2 cans French Onion Soup
- 2 cans Artichoke Hearts, Quartered
- 4 cups Chicken Broth (or 1 Full Box)
- 2 cans Diced Or Stewed Tomatoes (or One Of Each; I Usually Use A Flavored Kind, Italian Or Something)
- 1/2 cups Carrots (I Just Cut Up A Handful Of Snack-Sized Carrots)
- 1 package Tortellini (Tri-color, Frozen)
- In a big pot, brown the sausage. Add the seasoning. Then start pouring in all the canned goods (with their juice) and the chicken broth. Add carrots (they add color). Stir occasionally. Bring to a boil. Add the frozen tortellini and cook according to the package directions (usually about 5 minutes). Give it another stir. Serve.
- *This freezes wonderfully. I have also made it for tailgates the night before and just heated it up at the game. The tortellini can hold its own quite well.
