Graham Cracker Fruit Cake
- 30 single graham crackers, crushed
- 1 can Eagle Brand
- 1 (7 1/4 oz.) pkg. dates, cut
- 1 (16 oz.) pkg. mixed candied fruit
- 3 c. finely chopped pecans
- 1 pkg. orange peel (optional)
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 tsp. allspice
- 1/4 tsp. cloves
- 1 can Angel Flake coconut
- First, mix salt, cinnamon, allspice and cloves with graham cracker crumbs, then add fruit, dates and coconut.
- Mix well until coated good with crumbs.
- Add Eagle Brand and mix well.
- With a spoon, put into a loaf pan sprayed with Pam.
- Add a little mixture at a time; press evenly into pan with spoon so as not to have any air pockets.
- Continue until filled at least 3/4 full.
- Makes 1 small loaf and 4 mini loaves or 2 small loaves.
- Bake at 350u0b0 for 30 minutes.
- Cool completely in pan.
- Remove, cool and wrap in wax paper and foil to freeze or store in refrigerator.
- Best made a month ahead so to season.
