Best Low-Fat Banana Bread
- 2 cups All-purpose Flour
- 3/4 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 teaspoon Cinnamon
- 7 Tablespoons Sugar
- 1/3 cups Light Brown Sugar
- 4 Tablespoons Unsalted Butter, Softened
- 1 whole Egg (large)
- 1 whole Egg White
- 1-3/4 cup Very, Very Ripe Mashed Banana
- 1/3 cups Low-fat Or Non-fat Yogurt (plain Or Vanilla)
- 1 teaspoon Vanilla Extract
- Preheat oven to 350 degrees F.
- Whisk together flour, baking soda, salt and cinnamon.
- Beat butter and sugars until well blended. Add egg and egg white; beat well. Add in mashed banana, yogurt and vanilla extract; beat unil blended.
- Add flour mixture to wet ingredients in small additions (about 3), beating slightly after each addition. Bake for 1 hour or until a toothpick comes out clean.
