Turkey Lasagne(Serves 8 To 10)
- 1 lb. ground turkey
- 1 onion, chopped
- 3 cloves garlic, crushed
- 1/4 lb. sliced mushrooms
- 2 Tbsp. vegetable oil
- 4 c. tomato juice
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) pkg. lasagne noodles
- 8 oz. shredded Mozzarella cheese
- 1 tsp. basil, crushed
- 1 tsp. oregano, crushed
- 1 tsp. salt, divided
- 1/2 tsp. pepper, divided
- 2 eggs
- 1 lb. Ricotta cheese
- 1 c. grated Parmesan cheese
- 1 Tbsp. parsley flakes
- In large saucepan, saute ground turkey, onion, garlic and mushrooms in oil until turkey looses pink color.
- Add tomato juice, tomato paste and spices, 1/2 teaspoon salt, 1/4 teaspoon pepper. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Stir occasionally.
