Tomato Surprise
- 1 stick Butter
- 3 teaspoons Fresh Garlic, Minced
- 1 loaf Italian Bread, Cut Into Cubes
- 8 Large Tomatoes, Peeled And Chopped
- 1 Green Pepper, Stem And Seeds Removed, Diced
- 2 Tablespoons Dried Basil
- 2 teaspoons Garlic Powder
- Salt And Pepper, to taste
- 2 cups Mozzarella, Shredded
- Preheat oven to 350 F.
- Melt butter in a small saucepan over medium heat. Add minced garlic and mix well. Cook for a minute or two until garlic is softened then remove from heat.
- Put bread cubes on a rimmed cookie sheet and coat with the garlic butter. Bake until crunchy, about 10-15 minutes. Remove from oven.
- Cover the bottom of a 9x13 baking dish with the garlic bread cubes. Cover with chopped tomatoes. Sprinkle with the diced green pepper. Add basil, garlic powder and salt and pepper to season.
- Cover with foil and bake until juicy and bubbly, about 45 minutes. Remove it from the oven. Remove foil and cover with shredded mozzarella. Put it back in the oven just long enough to melt the cheese, about 10 minutes. Enjoy!
